Giorgio’s new cuisine is a combination of technique and traditions of worlds which have not yet disappeared, of peasant traditions where one loves the earth and everything it produces.The special prosciutti (cured meats) which come from Tuscany (Cinta Senese), An interbreed of wild boar and swine; the selection of pecorino cheeses which were up until a century ago the main sustenance for sheep herders in all of rural Italy, the mustards a middle ages recipe, the Buffalo mozzarella which is sent fresh to all the capitals in the world; all this combined with a cuisine unique in the pairing of its ingredients create completely new flavors and fragrances which can awaken in you long forgotten memories.

Giorgio’s offers a new wine cellar holding more than 250 Italian Wines all currently in the Top Wines of Wine Spectator.These can be combined with a variety of cold and warm dishes including vegetarian plates, fish, meat and homemade pastas. Chef Mat Vacharat of St. John Catering in the USVI prepared the first course for the guests of the Winemakers Dinners, he served a delicious Grilled Caribbean Rock Lobster Cake, on Baby Arugula, Lime Vinaigrette and Annatto Seed Oil

Chef Clif Holt of Little Savanna Restaurant and Bar in Birmingham Alabama, gave the guests an unexpected surprise with his Hickory Smoked Duck Breast, with Dirty Rice Risotto.
