An Exotic Home Culinary Adventure
By Karla Erovick
Two things I love: exotic cuisine and cooking. When I found out about a monthly culinary subscription box from Hungry Globetrotter, I was intrigued. The box arrives with tested recipes, spices, and other non-perishable ingredients to prepare cuisine from around the globe. They think of everything: a shopping list, background information about the culture and meal, and information about timing each of the dishes.
When this month’s box arrived I was delighted to find Rock the Kasbah Moroccan Dinner ingredients. I love Moroccan cuisine, but don’t have the requisite spices or experience preparing these dishes.
The package contained couscous with fruit and nuts, green olives with preserved lemon, harissa, a spicy tomato sauce, and Ras-el-Hanout, a distinctive Moroccan spice blend. The detailed notes and recipe gave me the confidence to test out this exotic meal for friends.
I prepared a classic dish, lemon and olive tagine with chicken, served with fruit and nut couscous accented by the spicy tomato harissa. Happily, I followed the instructions, which timed everything perfectly for a delicious meal. I felt as if I was enjoying a feast in Morocco but in the comfort of my own home.
The recipe included suggestions for serving mint tea and a wine suggestion, Shiraz. I also served baklava, prepared by a local deli and drizzled with honey. It was fun to learn that Morocco was the first country to officially recognize America as an independent country in 1777. Having visited Morocco, I have some beautiful pottery and other decorative objects that I included in my table setting to create the right ambiance.
I had so much fun preparing a Moroccan feast, I can’t wait to see what next month’s box will bring.
